Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt

Wet Ingredients

  • 0.5 cups unsalted butter, softened Make sure butter is softened for easy mixing.
  • 0.75 cups sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cups milk

Fruits

  • 1 cup mixed dried fruits/candied fruit Coat with flour to prevent sinking.
  • 0.25 cups raisins (optional)
  • 1 tbsp flour (for coating fruits)

Preparation

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Toss the dried fruits with 1 tbsp flour to prevent sinking.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, cream the butter and sugar until fluffy.
  • Beat in the eggs one at a time, then add the vanilla.
  • Add the dry ingredients alternately with the milk, mixing gently.
  • Fold in the coated fruits.
  • Pour the batter into the loaf pan and smooth the top.

Baking

  • Bake for 50–60 minutes until golden and a toothpick comes out clean.
  • Cool before slicing.
  • Optional: Brush with warm apricot jam for a glossy finish.

Notes

Serve as is, or with a dollop of whipped cream or a scoop of ice cream. Best paired with tea or coffee. Store wrapped in plastic or in an airtight container.
