Ingredients
  

For the Cake

  • 2 cups gluten-free 1:1 flour or all-purpose flour Use a gluten-free blend for best results.
  • ¾ cup cocoa powder Use high-quality cocoa for richer flavor.
  • 2 cups sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 5 oz unsweetened Greek yogurt
  • 1 tsp kosher salt
  • ½ cup vegetable oil
  • 1 tsp espresso powder
  • 1 cup fresh brewed coffee
  • 2 large eggs Ensure at room temperature.
  • 1 tsp vanilla

For the Frosting

  • 1 ½ cups butter, room temperature
  • 5 cups powdered sugar
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 tsp espresso powder
  • 1 cup unsweetened cocoa

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the gluten-free flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine yogurt, oil, espresso powder, coffee, eggs, and vanilla.
  • Add the wet ingredients to the dry ingredients and mix well.
  • Divide the batter into two greased cake pans.
  • Bake for 30–35 minutes, or until a toothpick comes out clean.

Frosting Preparation

  • Beat the room temperature butter until creamy.
  • Gradually add the powdered sugar and cocoa, then mix until smooth.
  • Pour in milk, vanilla, and espresso powder. Mix until smooth and fluffy.

Assembly

  • Once the cakes have cooled, layer them with a generous amount of frosting in between.
  • Frost the top and sides with the remaining frosting.

Notes

Let the cake cool completely before frosting. Garnish with fresh berries or chocolate sauce if desired.
