  • 2 cups mashed sweet potatoes (cooked and softened) Use well-cooked sweet potatoes for a smoother texture.
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar You can reduce the sugar or use natural sweeteners like honey or maple syrup.
  • 2 eggs For a vegan version, replace with flaxseed.
  • 1/2 cup evaporated milk Feel free to use plant-based milk if desired.
  • 1 tsp vanilla extract
  • 1 tsp cinnamon A sprinkle of cinnamon on top before serving adds a nice flavor.
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking dish.
  • In a large bowl, combine the mashed sweet potatoes and melted butter.
  • Add the brown sugar, granulated sugar, eggs, evaporated milk, and vanilla extract. Mix until smooth.
  • Stir in the cinnamon, nutmeg, and salt.
  • Pour the mixture into the prepared baking dish and spread it evenly.

Baking

  • Bake for 40–45 minutes until set and lightly browned on top.
  • Let it cool slightly before serving. Enjoy warm.

Notes

Sweet Potato Pudding is best served warm. Top with whipped cream or a scoop of vanilla ice cream. Adding raisins or nuts is a great variation.
