For the cake

  • 2 cups mashed sweet potatoes Use freshly mashed for best flavor.
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition.
  • Stir in the mashed sweet potatoes and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
  • Pour the batter into the prepared cake pan and smooth the top.

Baking

  • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Pair with a dollop of whipped cream or a scoop of vanilla ice cream.
