Preparation

  • Preheat your oven to 325°F (160°C) and grease a loaf or bundt pan.
  • In a mixing bowl, beat the butter, cream cheese, and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients.
  • Gently fold in the diced strawberries.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake for 60-70 minutes or until a toothpick comes out clean.
  • Let the cake cool completely.

Glazing

  • Combine the powdered sugar with strawberry puree until smooth to make the glaze.
  • Drizzle the glaze over the cake before serving.
