Ingredients
  

For the Sweet Potato Bites

  • 2 large sweet potatoes, sliced into thick rounds
  • 2 tbsp olive oil
  • to taste Salt and black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika

For the Toppings

  • 4 oz goat cheese (or cream cheese/feta)
  • 1/3 cup dried cranberries
  • 1/3 cup walnuts
  • 1 tbsp honey
  • to taste Fresh thyme for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Place sweet potato rounds on a baking tray.
  • Brush with olive oil and season with salt, pepper, garlic powder, and paprika.
  • Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
  • Toast walnuts lightly in a pan for 2–3 minutes.
  • Drizzle with honey and stir until coated.
  • Once sweet potatoes are done, top each round with a spoonful of goat cheese.
  • Add dried cranberries and honey walnuts on top.
  • Garnish with fresh thyme and serve warm.

Notes

Cut the sweet potatoes into even sizes for uniform cooking. Experiment with different toppings like nuts or seeds. Adding a sprinkle of cinnamon can enhance the sweetness of the dish.
