Ingredients
  

For the cheesecake layer

  • 8 oz cream cheese, softened Make sure cream cheese is softened for smooth mixture.
  • 1/3 cup granulated sugar Use fresh ingredients for best flavor.
  • 1 large egg
  • 1 tsp vanilla extract

For the pecan topping

  • 1 cup chopped pecans Toast lightly for added flavor if desired.
  • 3/4 cup light corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For the crust

  • 1 9-inch unbaked pie crust Store-bought is acceptable.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Place the pie crust into a 9-inch pie dish.
  • Make the cheesecake layer by beating the cream cheese, sugar, egg, and vanilla until smooth. Spread this evenly into the pie crust.

Making the topping

  • In another bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla, and salt. Stir in the pecans.
  • Carefully pour the pecan mixture over the cheesecake layer.

Baking

  • Bake for 50–60 minutes until the center is set.
  • Allow to cool completely, then refrigerate for at least 4 hours before serving.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Let sit at room temperature before serving again.
