Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

For the cheesecake filling

  • 24 oz cream cheese, softened Ensure it's at room temperature for a smooth filling.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the peach layer

  • 2 cups peaches, peeled and diced (fresh or canned, drained) Use ripe, fresh peaches for the best flavor.
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch

For the crumble topping

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup cold butter, cubed

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs, melted butter, brown sugar, and cinnamon together.
  • Press the mixture into a springform pan and bake for 10 minutes. Allow it to cool.

Make Peach Layer

  • In a separate bowl, toss the diced peaches with brown sugar, cinnamon, and cornstarch. Set aside.

Cheesecake Filling

  • Beat the softened cream cheese until smooth.
  • Gradually add granulated sugar and vanilla, then mix in the eggs one at a time.
  • Fold in sour cream until the mixture is creamy.

Make Crumble

  • In another bowl, mix flour, brown sugar, and cinnamon.
  • Cut in cubed cold butter until you have a crumbly texture.

Assemble

  • Pour the cheesecake batter over the cooled crust.
  • Spoon the peach mixture over the cheesecake batter.
  • Evenly sprinkle the crumble on top of the peaches.

Bake

  • Bake for 55–65 minutes until the center is slightly jiggly.
  • After baking, turn off the oven, crack the door, and let the cheesecake cool for 1 hour.
  • Refrigerate for at least 6 hours or overnight.
  • You can drizzle caramel sauce over the top for added sweetness before serving.

Notes

For best flavor, consider mixing in a bit of lemon zest in the peach layer. To serve, slice into generous pieces and enjoy plain or with whipped cream.
