  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 egg
  • 2 tbsp honey or maple syrup Can adjust sweetness
  • 1 zest lemon Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup fresh or frozen blueberries Can substitute with raspberries or cranberries
  • 2 tbsp white chocolate chips Optional, for extra sweetness

Preparation

  • Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  • Blend cottage cheese until smooth.
  • In a bowl, mix cottage cheese, egg, honey, lemon zest, lemon juice, and vanilla.
  • Stir in oats, protein powder, and baking powder until combined.
  • Gently fold in blueberries (and white chocolate chips if using).
  • Scoop tablespoon-sized bites onto the tray.

Baking

  • Bake for 15–18 minutes until lightly golden.
  • Cool completely before serving.

Notes

Store in an airtight container in the refrigerator for about five days or freeze in a freezer-safe bag for up to three months. Adjust sweetness by varying honey or maple syrup. Substitute blueberries for other fruits or chocolate as desired.
