  • 0.25 cups freshly squeezed lemon juice
  • 0.5 cups whole milk
  • 1 tsp vanilla extract

Glaze

  • 1 cup powdered sugar
  • 1 tbsp lemon juice

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with cupcake liners.
  • In a bowl, whisk together flour, baking powder, and salt. Set this mixture aside.
  • In another bowl, cream the butter and sugar until it is light and fluffy.
  • Beat in the eggs one at a time. Then, mix in the lemon zest, lemon juice, and vanilla extract.
  • Gradually add the dry ingredients to the mixture, alternating with the milk. Start and end with the flour mixture.

Baking

  • Divide the batter equally into the prepared muffin tin.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Glazing

  • For the glaze, whisk together powdered sugar and lemon juice until smooth.
  • Drizzle the glaze over the cooled cakes and garnish with lemon zest, if you wish.
