Main Ingredients

  • 3 ripe bananas, mashed Make sure bananas are ripe for best flavor.
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 pcs eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt Greek yogurt can be substituted for sour cream.
  • 1 cup chopped walnuts

Optional Frosting

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 350°F / 175°C. Grease and line a loaf pan or cake pan.
  • In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In another bowl, beat butter and brown sugar until fluffy.
  • Add eggs one at a time, then mix in vanilla and mashed bananas.
  • Stir in sour cream.
  • Gradually fold in dry ingredients until just combined.
  • Fold in chopped walnuts.
  • Pour batter into the prepared pan.

Baking

  • Bake for 45–55 minutes or until a toothpick inserted comes out clean.
  • Cool completely.

For Frosting (optional)

  • Beat cream cheese and butter until smooth.
  • Add powdered sugar and vanilla; mix until fluffy.
  • Spread over the cooled cake and top with extra walnuts.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate for extended shelf life to a week. This cake can be frozen for up to three months. Mix gently to avoid overworking the batter.
