  • 0.5 cups unsalted butter (room temperature)
  • 1 tbsp fresh lemon zest
  • 0.5 cups freshly squeezed lemon juice
  • 4 large eggs
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease two round cake pans.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the butter and sugar until light and fluffy.

Mixing

  • Add eggs one at a time, along with lemon zest, lemon juice, and vanilla extract. Mix well.
  • Gradually incorporate dry ingredients into the wet mixture until just combined.

Baking

  • Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  • Let cool before frosting or dusting with powdered sugar.

Notes

For serving, you can frost it with lemon buttercream for extra sweetness or dust it with powdered sugar for a light touch. Store leftovers in an airtight container. Can be refrigerated for up to a week or frozen for three months.
