Ingredients
  

Cake Batter

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 Tablespoon melted butter
  • 1 large egg (room temperature)
  • cups buttermilk (room temperature)
  • 3 Tablespoons softened butter

Streusel Filling

  • ½ cup all-purpose flour for streusel filling
  • 1 Tablespoon cinnamon
  • ½ cup brown sugar
  • ½ cup firmly packed light brown sugar

Crumb Topping

  • ½ cup all-purpose flour for crumb topping
  • ½ Tablespoon cinnamon for crumb topping
  • ¼ cup butter (cubed) for topping
  • teaspoon salt for topping

Drizzle Topping

  • ½ cup powdered sugar for drizzle
  • teaspoons milk for drizzle

Instructions
 

Preparation

  • Heat your oven to 375°F. If desired, line the baking dish with parchment paper for easy removal. Grease a 9 by 9-inch baking dish with 2-inch sides.
  • In a large bowl, combine all the dry ingredients.
  • In a medium bowl, mix the melted butter, egg, and buttermilk.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Pour half of the cake batter into the prepared dish.

Streusel Filling

  • Combine the sugar, cinnamon, and flour for the filling.
  • Sprinkle it over the first layer of batter.

Crumb Topping

  • In a small bowl, mix the flour, sugar, and salt.
  • Cut in the cubed butter until crumbly, then sprinkle it over the remaining batter.

Drizzle Topping

  • Mix the powdered sugar and milk to create a drizzle.

Baking

  • Bake for about 25-30 minutes or until golden brown and a toothpick comes out clean.

Notes

Serve your coffee cake warm or at room temperature, paired beautifully with coffee, tea, or milk. You can sprinkle more powdered sugar on top or add fresh berries for a lovely touch. To store, let it cool completely and place it in an airtight container at room temperature for up to 3 days.
