Dry Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups brown sugar
  • 0.75 cups unsweetened cocoa powder (alcohol-free)
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 0.5 teaspoons salt

Wet Ingredients

  • 2 large eggs
  • 1 cup buttermilk (or milk + 1 tbsp vinegar) Can substitute with regular milk mixed with vinegar.
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla (alcohol-free)
  • 1 cup hot halal coffee (or hot water) Adds richness to the cake.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  • In a large bowl, combine all the dry ingredients: flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
  • Gradually add the hot coffee or water to the batter and mix until well combined.
  • Pour the batter evenly into the prepared cake pans.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.

Serving

  • Frost with your favorite frosting and enjoy. Slice into even pieces and serve plain or topped with fresh berries or ice cream.

Notes

Make sure your ingredients are at room temperature for the best results. Sift cocoa powder to avoid lumps. Don’t overmix the batter to keep the cake tender. Experiment with different frostings.
