Ingredients
  

For the crust and filling

  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 4 cups fresh or canned cherries (pitted and halved) Make sure cherries are pitted and halved for even distribution.

For the glaze

  • 1 cup powdered sugar
  • 1-2 tbsp milk Use milk for desired glaze consistency.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Mix in the flour and salt until just combined.
  • Press about 2/3 of the dough into the bottom of the prepared baking dish.
  • Spread the cherries evenly over the dough.
  • Crumble the remaining dough over the cherries.

Baking

  • Bake for 30–35 minutes, or until the top is golden brown.
  • Let cool completely.

Glazing and Serving

  • For the glaze, mix powdered sugar with milk until smooth and drizzle over the cooled bars.
  • Cut into squares and enjoy!

Notes

Cherry pie bars can be served warm or at room temperature. You can add a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence. Store in an airtight container for a few days at room temperature, or up to a week in the fridge. For longer storage, freeze for up to three months.
