Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water

For the cherry filling

  • 2 cups cherries (fresh or canned, pitted)
  • 1/2 cup sugar (for cherry filling)
  • 2 tbsp cornstarch
  • 1/2 cup water

For the whipped cream

  • 3 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Chocolate shavings (for decoration)
  • Whole cherries (for decoration)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease two 9-inch cake pans.
  • In a bowl, mix the dry ingredients together.
  • Add the eggs, milk, oil, and vanilla, stirring well.
  • Mix in the hot coffee until the batter is smooth.
  • Bake for 30–35 minutes.

Cherry Filling

  • In a saucepan, combine cherries, sugar, water, and cornstarch.
  • Cook until thickened, then cool completely.

Assembly

  • Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  • If necessary, slice the cakes into layers.
  • Add whipped cream and cherry filling between each layer.
  • Frost the outside with whipped cream, cover the sides with chocolate shavings, and top with whipped cream swirls and cherries.
  • Chill for 1 hour before serving for the best flavor.

Notes

Use fresh cherries in season for the best flavor. Make the whipped cream right before serving for optimal texture. Don’t overmix the batter to ensure a light and fluffy cake.
